Back in August 2016, I stepped foot into my first self employed business
consultancy role. I was nervous, overwhelmed and thinking to myself “what the hell am I doing?”. Luckily I gave my head a shake and carried on and focused on the work in hand.

At that time food safety was a ‘Extra tick-box’ to complete on any of my consultation work. And at that time, I understood what was required to achieve a 5 on the FSA’s inspection score system. But what I didn’t understand was the ins and outs of what complex food safety terminology actually meant.

Fast-forward to 2017 and i began the intensive learning into food safety. sitting down, learning and understanding every single aspect of what food safety is, and cane be.

What is food safety?
(Microbiological, Physical, Chemical, Allergenic Hazards)

What is a Microbiological Hazard?
(Some microbiological hazards include Salmonella, Listeria and E.coli O157)

What is Salmonella?
Salmonella is a falcultative, anaerobic bacteria. Gram Negative bacteria

What is a gram negative bacteria?
A gram negative bacteria does not retain the crystal violet in the gram stain testing process

…and so on.

By 2018, I had completed the ‘apprentice stage’ of food safety learning. And from here the ‘masterclass’ learning phase began and has continued for the last 3 years.

What about now?

Since my initial food safety training I have gone on to guide and help over 200 individual businesses achieve a 5 on their food hygiene rating and continue to retain their rating through my intensive and microscopic inspections where I will leave no stone unturned.

In 2020 I began helping small independent suppliers on achieving SALSA accreditation. A certification that helps small businesses show they are safe enough to sell to the big supermarkets and suppliers.

This year I joined The HSE People Panel as the food safety expert. Within this role I contribute monthly articles and videos to help educate and guide all of us on the importance of food safety.
